In season 3 episode 7 of Diners, Drive-Ins and Dives, host Guy Fieri takes viewers on a tour of Memphis, Tennessee's best barbecue joints. First up is A&R Bar-B-Que, a family-owned establishment that has been around for over 30 years. Fieri samples their ribs, brisket, and pulled pork, which are all slow-cooked over hickory wood for over 12 hours.
Next, Fieri visits Payne's Bar-B-Que, another family-owned spot that has been open since the 1970s. He tries their famous chopped pork sandwich, which is served on a soft bun with a side of slaw. The sandwich is so good that Fieri declares it the best he's ever had.
After Payne's, Fieri heads to the Germantown Commissary, which has been serving up Memphis-style barbecue since 1981. He chats with the owner, Skip Steele, about his unique method of cooking whole hogs over a charcoal pit. Fieri samples their pulled pork, baby back ribs, and sausage, all of which are served with the restaurant's famous barbecue sauce.
The fourth stop on Fieri's Memphis barbecue tour is Tom's Bar-B-Q and Deli. This unassuming spot is known for its dry rub, which is used on everything from ribs to chicken to smoked bologna. Fieri tries the ribs and the bologna, both of which are cooked to perfection.
Finally, Fieri stops by Cozy Corner BBQ, a tiny joint where the pitmaster, Raymond Robinson, cooks everything on a coal-fired pit in a small brick shack. Fieri tries their Cornish game hen, which is coated in a spicy dry rub and smoked to juicy perfection.
Throughout the episode, Fieri also chats with the owners and pitmasters of each restaurant, learning about their unique history and cooking techniques. He marvels at the passion and dedication they have for their craft, and praises the Memphis barbecue scene as one of the best in the country.
