In this episode of Stanley Tucci: Searching for Italy season 2, Stanley visits the southern region of Calabria to discover its unique cuisine and culture. Stanley begins his journey in the city of Reggio Calabria, where he explores the local markets and tries out the region's famous 'nduja, a spicy spreadable sausage made from pork. He also visits a family-run pasta factory to learn the traditional method of making Calabrian pasta, including the popular dish of fileja.
Next, Stanley heads to the seaside town of Tropea, where he discovers the local delicacy of red onion. Known for its sweet flavor and versatility, Stanley tries the onion in a variety of dishes, including a savory onion tart. He also visits a nearby fish market, where he samples the fresh catch of the day, including octopus and swordfish.
In the hills of Calabria, Stanley visits a family farm that specializes in curing and aging meat. He learns about the different types of cured meats produced by the farm, including capocollo and soppressata. Stanley also tries his hand at making a traditional Calabrian dish of polenta with pork ragù.
Finally, Stanley ends his journey in the town of Cosenza, where he experiences the region's vibrant music and dance culture. He attends a traditional Tarantella dance performance and joins in the festivities by trying out some of the dance moves himself.
