Recipe Rehab is a cooking competition where two chefs compete to create healthier versions of a beloved dish. In season 3 episode 3, the dish in question is the classic British dish of fish and chips.
The two chefs, Chef Calvin and Chef Vikki, are tasked with creating healthier versions of the dish for a family who loves the classic recipe but wants to eat healthier. Chef Calvin's approach is to use a combination of flaxseed and bread crumbs for the batter and bake the fish instead of frying it. He also substitutes sweet potato fries for regular potato fries. Chef Vikki also opts for a baked version of the fish, using a mixture of panko bread crumbs and crushed almonds for the batter. She also makes a healthier version of tartar sauce using Greek yogurt and fresh herbs.
As the chefs cook, they both encounter challenges. Chef Vikki has trouble getting the batter to stick to the fish, while Chef Calvin's flaxseed and bread crumb mixture begins to crumble as it cooks. However, they both soldier on, determined to create the best version of the dish they can.
Once the recipes are complete, the family tastes both versions and gives their feedback. They enjoy both versions, but ultimately choose the dish created by Chef Vikki as their favorite. They appreciate the use of almonds in the batter and the fresh, tangy flavor of the yogurt-based tartar sauce.
In the end, the family is thrilled to have a healthier version of their favorite dish. They have learned that it is possible to enjoy the foods they love while also taking care of their health. The chefs have successfully demonstrated that healthy eating does not have to mean sacrificing flavor.
