The chef also discovers that the staff is using canned goods instead of fresh ingredients, which is affecting the quality of the food. Gordon decides to revamp the menu, emphasizing fresh, seasonal ingredients and more simple, classic dishes that can be executed well. To ensure that the kitchen stays clean and organized, Gordon institutes new sanitation practices and trains the staff in basic cooking techniques.
Finally, Gordon tackles the restaurant's branding and decor. He works with a designer to create a new logo and style for The Dovecote, giving it a more modern and welcoming feel. Gordon also pretties up the exterior of the building, adding flowers and new signage to attract more customers.
Throughout the episode, tensions run high as Stewart and Cassie struggle to cope with the changes and the challenges of running a restaurant. Gordon pushes them to think more strategically and communicate better with their staff, while also reminding them of the importance of having passion and pride in what they do. By the end of the episode, The Dovecote is transformed into a sleek and inviting restaurant that is poised to make a comeback.
