In Season 6, Episode 1 of No Reservations, titled Panama, host Anthony Bourdain takes viewers on a culinary journey through the Central American country of Panama. From the bustling streets of Panama City to the remote jungles of the Darien Gap, Bourdain seeks out the finest cuisine Panama has to offer.
The episode begins with Bourdain exploring the city's vibrant fish market, sampling fresh ceviche and admiring the colorful locals. He then heads to a nearby café to try some pan de agua, a traditional Panamanian bread, and chat with locals about the country's history. From there, Bourdain heads to a roadside stand to try the popular snack of plantains and beef jerky.
Next, Bourdain travels to the Darien Gap, a dense jungle that stretches from Panama to Colombia. The area is home to many indigenous tribes who still live a traditional way of life. Bourdain meets with members of the Embera tribe, who prepare him a feast of fish cooked over an open fire and accompanied by plantains and coconut rice. Bourdain is touched by their hospitality and the tribe's respect for the natural world.
Back in Panama City, Bourdain visits the Mercado de Mariscos, a seafood market where he samples some of the freshest ceviche and oysters he's ever had. He also samples a local favorite, sancocho, a hearty soup made with chicken, corn, yucca, and plantains. Bourdain then heads to a popular local restaurant where he meets Chef Mario Castrellon who introduces him to the flavors of Panama's Caribbean coast including their famous rondón soup.
Bourdain also visits one of Panama's most popular food festivals, Sabores del Chorrillo, where he tries a variety of street foods including meat skewers, corn on the cob, and sweet breads. He is struck not only by the diversity of the food but by the sense of community and celebration surrounding the event.
Throughout the episode, Bourdain also delves into the country's history, from the construction of the Panama Canal to the impact of American imperialism. He speaks with locals who have experienced poverty and hardship but also determinedly resist foreign intervention.
