The shine of the opening night wore off quickly for some contestants as they learned how the competition would progress now that their doors have opened. Over the next few weeks, a secret reviewer will dine in each of the restaurants. The reviewer will judge each restaurant on their food, service, atmosphere, and most importantly the long term viability of the business.
