In season 3 episode 8 of MeatEater, titled "Forbidden Feast: Mexico Javelina and Coyote," host Steven Rinella travels to Mexico in search of two species that are often considered pests: Javelina and Coyote.
The episode starts with Rinella meeting up with his guide, Memo, who explains the local view of these two animals. While Javelina may be seen as a nuisance by farmers, they are considered a delicacy by locals. Coyote, on the other hand, are often hunted and killed for sport.
Rinella sets up camp in the Sonoran Desert and begins his hunt for Javelina. He explains how their strong sense of smell makes them difficult to approach, but he manages to stalk and take down one with his bow. Rinella then shows how to field dress and cook the animal.
Continuing his hunt, Rinella encounters a group of coyotes and decides to try his luck at calling them in. After some trial and error, he successfully lures in a coyote with his call and takes it down with his rifle. He explains the coyote's role in the ecosystem and notes that while some may see them as pests, they play an important role as scavengers and predator control.
As Rinella prepares to cook the coyote, Memo shares a traditional Mexican recipe for Javelina and offers to help Rinella prepare it. They cook the Javelina over an open fire and pair it with corn tortillas and homemade salsa. Rinella notes that this experience offers a unique opportunity to learn about and appreciate local cuisine and culture.
The episode ends with Rinella reflecting on the importance of understanding the role these animals play in the ecosystem and the cultural significance they hold for the people who live alongside them. He notes that hunting can be a way to deepen our connection to the natural world and appreciate the food on our plates.
