In A Chef's Life season 2 episode 7, titled "The Fish Episode, Y'all", Chef Vivian Howard heads to the coast to learn more about North Carolina's thriving seafood industry. She visits a fisherman who provides her with some fresh catch, and she also meets with a local fishmonger who shows her some different types of fish that are available in the area.
Back in her kitchen at Chef & the Farmer, Vivian prepares a variety of dishes using the seafood she sourced from her coastal trip. She starts by making a seafood bouillabaisse that incorporates some of the fresh fish she acquired, along with shrimp, mussels, and other seafood. She also makes a classic North Carolina seafood stew called Lowcountry boil, which features shrimp, crab, sausage, and corn on the cob.
Vivian's next dish is a five-spice tuna with an avocado and bacon salsa. She sears the tuna and gets a nice crust on it while keeping the inside rare, and then serves it with the salsa on top. Her final dish is a roasted whole fish with a salsa verde made with parsley, garlic, capers, and lemon juice.
Throughout the episode, Vivian talks about the importance of using fresh, local seafood and supporting North Carolina's fishing industry. She also discusses the challenges that fishermen and fishmongers face, including changing regulations and the threat of overfishing. Despite these challenges, she remains committed to using sustainable seafood and helping to keep North Carolina's fisheries thriving.
