Welcome to the Meat Party is the eighth and final episode of the first season of Carnivorous. In this episode, host Courtney Rada takes viewers on a journey to explore some of the most unique and mouth-watering meat dishes from coast to coast.

The episode begins with Courtney in Los Angeles, where she visits local chef and restaurateur Brad Miller at his meat-centric restaurant, Inn of the Seventh Ray. Miller is known for his innovative techniques and use of high-quality meats to create dishes that are both delicious and beautiful. Courtney samples some of his signature dishes, including a lamb tartare and pork belly with a coffee barbecue glaze.

Next, Courtney travels to New York City to meet with chef and butcher Jake Dickson, who owns the legendary Dickson's Farmstand Meats in Chelsea Market. Jake takes Courtney through the process of breaking down a whole pig, demonstrating the importance of using every part of the animal. Courtney then joins him in the kitchen to try some of his expertly prepared pork dishes, including a stuffed porchetta and roasted pork belly.

Moving westward, Courtney lands in Denver to visit chef and pitmaster Bill Espiricueta at Smok Barbecue. Bill's passion for meat smoking has earned him a loyal following, and Courtney is excited to try some of his award-winning dishes. She samples a variety of smoked meats, including brisket and ribs, before helping Bill prepare his famous pastrami sandwich.

Continuing on her meat-centric journey, Courtney heads to Miami to meet with chef and restaurateur Michael Schwartz at his restaurant Amara at Paraiso. Michael's approach to meat is centered around the use of sustainable and locally sourced ingredients. Courtney learns about the importance of using humane and ethical techniques in meat production before sampling Michael's grilled lamb and short rib empanadas.

The final stop on Courtney's meat party is Nashville, where she visits chef and restaurateur Pat Martin at his namesake restaurant Martin's Bar-B-Que Joint. Pat's love for barbecue is infectious, and Courtney can't wait to try some of his mouth-watering dishes. She samples a variety of meats, including whole hog and brisket, before joining Pat in the kitchen to make a pitmaster sandwich.

Throughout the episode, Courtney's enthusiasm for meat is contagious as she explores some of the most innovative and delicious meat dishes in the country. From lamb tartare in Los Angeles to whole hog barbecue in Nashville, Welcome to the Meat Party is a celebration of all things meat, served up with a side of passion and expertise.
