Andrew also meets with the Hindustani community, who migrated to Suriname from India in the 19th century. He tries their take on roti, a flatbread that is filled with curried chicken or vegetables and served with spicy sauce. Andrew notes that Suriname's roti is distinct from the more familiar dish found in India, with a unique blend of spices that reflect the country's multicultural heritage.

As Andrew continues his journey, he meets with fishermen who catch the prized freshwater fish known as traípa. He also tries Suriname's version of seafood stew, which is made with traípa and a variety of spiny crabs. Andrew is impressed with how the Surinamese have incorporated fresh ingredients from the local rivers and forests into their cuisine.

In addition to trying traditional dishes, Andrew also visits a modern restaurant that is putting a new spin on Surinamese cuisine. The chef there prepares a dish of suckling pig with gravy made from Surinamese rum, and Andrew is impressed with the innovative use of local ingredients.

Throughout his journey, Andrew is struck by how Surinamese cuisine has evolved from the country's history of colonization and migration, and how it reflects the diverse backgrounds of its people. He notes that Suriname's cuisine is often overlooked, but its unique blend of flavors and spices make it a must-visit destination for any food lover.
