In the fifth episode of season nine of Beat Bobby Flay, called "Inside Scoop," two up-and-coming chefs compete for the chance to take on the legendary Bobby Flay in the kitchen. The show kicks off with each of the chefs being introduced and revealing their signature dishes, which they will be preparing for Bobby and his esteemed panel of judges.
First up is Chef Hiram Quintana, a Miami-based chef who specializes in Latin cuisine. He presents his signature dish, a savory and spicy Provoleta cheese with shishito peppers and grilled bread. Bobby and the judges are impressed with the dish and note the spicy kick that comes from the peppers.
Next is Chef Trigg Brown, a Brooklyn-based chef who creates Korean-inspired dishes. He presents his signature dish, a Korean-style smoked brisket with pickled vegetables and a homemade soy glaze. Bobby comments on the depth of flavor in the dish and the tenderness of the brisket.
After tasting the chefs' signature dishes, Bobby chooses the secret ingredient: Ice cream! Both chefs must prepare two dishes featuring ice cream as the star ingredient. The chefs scurry off to the kitchen to begin brainstorming their creations.
Chef Hiram decides to create a savory dish using the ice cream as a topping. He decides on a grilled pork chop with a mushroom and onion gravy, topped with a scoop of olive oil ice cream. The judges are skeptical of the olive oil ice cream but eager to try it.
Chef Trigg decides to create a dessert dish using the ice cream as a base. He decides on a miso ice cream with a toasted sesame oil drizzle, served with a savory peanut brittle and a sea salt caramel sauce. The judges are impressed with the unique flavor combination and texture of the dish.
The judges taste both dishes and give their critiques. They are impressed with Chef Hiram's use of ice cream as a savory topping, but some feel that the olive oil ice cream overpowers the dish. They are in awe of Chef Trigg's dessert dish, noting the perfect balance of sweet and savory flavors and the creativity of the peanut brittle.
After deliberating, the judges declare Chef Trigg the winner and he advances to the final round to face off against Bobby Flay. The episode ends with a sneak peek of the next episode, where Chef Trigg will attempt to beat Bobby Flay in the kitchen and claim the title of champion.
