In the thirteenth episode of season 9 of Beat Bobby Flay, titled "Record Breaking," two skilled chefs go head-to-head for the chance to compete against celebrity chef Bobby Flay. The episode begins with host Ted Allen introducing the competitors - Chef Matthew Raiford from Brunswick, Georgia and Chef Teresa Giacalone from Long Beach, New York.
Chef Matthew Raiford is a farmer and chef who runs the farm-to-table restaurant The Farmer and The Larder. He is known for his Southern-style cuisine and sourcing fresh ingredients from his own farm. Chef Teresa Giacalone is the executive chef at the Le Play Cafe, where she creates Italian-inspired dishes using local ingredients.
The first round of the competition is the signature dish challenge, where each chef has 20 minutes to prepare their best dish using a surprise ingredient. The ingredient for this episode is sea urchin, which presents a challenge for both chefs as they will have to work quickly to prepare the delicate and often tricky ingredient.

As the clock counts down, tensions rise in the kitchen as both chefs work feverishly to complete their dishes. Chef Matthew prepares a glazed salmon with a side of vegetables, while Chef Teresa decides to smoke her salmon and serve it with a fennel salad.
The judges sample both dishes, and once again, the decision is a tough one. Both dishes are highly praised for their creativity and taste, but ultimately, there can only be one winner. After careful consideration, the judges award the win to Chef Teresa, who has managed to create a perfectly balanced and flavorful dish that highlights the king salmon.
With the win under her belt, Chef Teresa moves on to the final round, where she will face off against celebrity chef Bobby Flay for the chance to win $10,000. In this round, both chefs must prepare their own signature dish using a surprise ingredient that is revealed just minutes before the start of the competition.
