Poncho begins his tour through Southern Baja. He has breakfast at the Nicolas Bravo Market and lunch by the Cortes Sea with some good fiends. Later, he visits Damiana's liquor store, a regional landmark. And finishes the day on his way to Los Cabos.

Diego Hernandez, one of the top chefs in the region, welcomes him in his restaurant Corazon de Tierra, and teaches him the concept behind his kitchen, based on the ingredients from their own orchard, which are ready to harvest and be cooked. Then, in Rosarito, he enjoys the finest lobster and surfs the best waves the Pacific has to offer.

Together with Juan Jose Pascencia, he goes to the emblematic hotel where the Caesar salad was created, and joins Juan Jose's brother Javier -one of the top 2 chefs in the state- to learn more about Baja California cooking. He also visits his restaurant Mision 19, and enjoys a dish from its menu.
